Loaded Potato Pancakes Recipe



What to do with all that left over twice baked potato mixture you have? You could eat it by its self, use it to top a shepard pie, or you could make PANCAKES! It's so easy to make potato pancakes. Make sure they are crispy though because otherwise they are really mushy.


Ingredients:


2 cups of leftover twice baked potato mixture
1/4 cup of flour
2 eggs
vegetable oil, for frying
garnish: chives and sour cream


Recipe:


Mix leftover potatoes, flour and eggs. Mixture should be thick. In skillet heat oil over medium high heat. Add 1/4 cup of mixture to hot skillet. Cook for about 3 minutes or until the sides begin to become golden brown and some bubbles appear over surface.


Flip and continue to cook for 1-2 minutes or until both sides are dark brown and crispy. Serve immediately and garnish with sour cream and chives.
